Mandarin Chicken Pasta Salad
Dressing:
1 tsp finely chopped
peeled fresh gingerroot
1 garlic clove
1/3 cup white wine
vinegar
1/4 cup orange juice
¼ cup vegetable oil
1 tsp sesame oil
1 envelope Lepton onion soup mix
2 tsp sugar
Salad:
8 oz. uncooked pasta (bowtie or rotini works well)
½ cucumber
½ diced red pepper
1 package (6oz) baby spinach leaves
1 can (11oz) mandarin orange segments
2 cups diced cooked chicken
½ cup sliced almonds,
For the dressing, finely chop ginger root. In bowl, whisk ginger root, garlic, vinegar, orange juice
vegetable oil, sesame oil, onion soup mix, and sugar. Cover and refrigerate
until ready to use.
For salad cook pasta according to the package directions:
drain and rinse under cold water. Place pasta in a large bowl.
Meanwhile, slice cucumber, and dice bell pepper. Coarsely chop
onion, Place cucumber, bell pepper, onion, spinach, mandarin oranges, chicken
and Almonds to pasta. Pour dressing over salad and toss. Serve immediately.
Yields 12 servings
