Mushrooms in white creamy sauce

Hey, It's me again. wow I can't believe I'm writing twice this week but here it goes! I'm going to call this Mushroom in white sauce. Because for real I have no clue what else to call it =)

The Ingredients

2 packs of fresh mushrooms
2 scallion (you can find them with the onions)
2 Tb Olive oil
2 tbs Italian seasoning 
2 Tb mince garlic
16 oz Heavy whipping cream
1/4 cup Feta cheese
1 cup Mozzarella cheese

Directions:

Wash mushroom and slice in haft, mince scallion and place in a large frying pan with the olive oil. Fry on low heat, till they are beautifully brown and tinder. Add Italian seasoning, garlic and cream cook on low heat till it comes to simmer, Add both cheese and cook till it fully melted serve over noddles.
* like to use Penna noddles









For the chicken

The Ingredients:

2 chicken breast
Mozzarella cheese
butter 
Italian seasoning
Mince garlic




Directions:

Slice chicken breast into two pieces, I added small piece of mozzarella cheese and a thin piece of butter. I used about 1/4 tbs of Italian seasoning

and garlic and a dash of salt. Roll them up and use tooth picks to hold into place fry them in a large pan with little bit of olive oil cover and cook till now more pink. It toke mine around 20 minutes.

Home made Spaghetti


Let me See what is new with my life? I’m at CPCC College now I go three nights a week, I’m still working a full time job, and I have a wonderful boyfriend that is a rodeo man. So almost every weekend we are gone out of town. So my cooking has been very limited the last little while. I’m going to write short recipe of something I made the other day. It’s something like spaghetti, but a little more on the Italian side, I had this while I was in Italy. I hope you enjoy =)


The Ingredients  

1 lb of fried hamburger meat
1 small can of Tomato paste
2 cans of Dice tomatoes (I like to use Diced Tomatoes with Basil, Garlic and Oregano)
1 small can of green chilies (if you don’t like it hot do not add)
¼ cup of white wine (I do use a certainty kind whatever I have on hand, But not sweet.)
3TB Pour Olive oil
2TB of mince garlic + 2TB to fry with meat
2TB Oregano
2TB Italian seasoning + 1TB to fry with meat
1Tb Parsley
1 tsp Red chili 

I like to fry my hamburger meet with a little salt, add garlic and Italian seasoning. After browning the meat place all the ingredients in a pot and cook on high heat till right at boiling. Turn down heat till simmer and cover and let cook for about 1 ½ to 2 hours.
You can serve it with any kind of noodles, But my favorite kind is Gnocchi (it’s made out of potato’s) 

*I also use a spice that is fuming hot, But it is from Italy, I bought it while I was over there. You can not find it here in the states.

Mandarin Chicken Pasta Salad


Mandarin Chicken Pasta Salad
Dressing:
 1 tsp finely chopped peeled fresh gingerroot
1 garlic clove
1/3  cup white wine vinegar
1/4 cup orange juice
¼ cup vegetable oil
1 tsp sesame oil
1 envelope Lepton onion soup mix
2 tsp sugar
Salad:
8 oz. uncooked pasta (bowtie or rotini works well)
½ cucumber
½ diced red pepper
1 package (6oz) baby spinach leaves
1 can (11oz) mandarin orange segments
2 cups diced cooked chicken
½ cup sliced almonds,
For the dressing, finely chop ginger root. In bowl, whisk  ginger root, garlic, vinegar, orange juice vegetable oil, sesame oil, onion soup mix, and sugar. Cover and refrigerate until ready to use.
For salad cook pasta according to the package directions: drain and rinse under cold water. Place pasta in a large bowl.
Meanwhile, slice cucumber, and dice bell pepper. Coarsely chop onion, Place cucumber, bell pepper, onion, spinach, mandarin oranges, chicken and Almonds to pasta. Pour dressing over salad and toss. Serve immediately.
Yields 12 servings

Bridal shower Ideas and recipes

I just did this Bridal shower for a friend of mine that is getting married next month and I was very pleased with the way things true out and decide to post pictures and some recipes.




 These wonderful looking plate is Cheddar cheese, Provolone cheese, Hard salami, Black Olives, and cheery tomatoes all on a *appetizer stick. and drizzled with Italian dressing over top.  (*you can buy them from party city)

  These little bit size cucumber sandwiches are so ease to make.Take a loft of bread slice all the edges off and than slice them in haft.Take 8oz of cream cheese
1 cup of sour cream 
One package of ranch dressing mix 
2 Tablespoons of dill weed
2 Tablespoons of mince garlic
a dash of salt and pepper
Mix all this together in a mixer spread on top of bread slices, 
Than take one cucumber and slice very thin.  
Place one slice on top of every sandwich  
 
This is a simple way of doing a vegetable tray without the tray simple place them in clear glass vase.





Dipped Pretzel in White or Milk Chocolate drizzled with
White or Milk Chocolate of top

Another simple way of doing a fruit tray with out the tray, it takes away from the bla. Simple place what ever fruit you wish to use and tooth pickes. 

This wonderful cake is a simple white cake mix
With a Lemon curd* and fresh strawberry's, With a simple white icing on top.

Home made Chicken Alfredo

Hey Good Morning, I know I haven't posted in awhile I have been crazy busy the last couple days. With work and try to get all my school stuff ready because I start this coming Monday for college.  But I did cook something the other night and decide to write it down for ya'll. I came up with this recipe awhile back. But i have always keep adding to it til now. 


Its Home Made Chicken Alfredo 


Ingredients:
2bl of chicken breast ( best if its boneless and skinless)
3Tablespoons Olive oil
3Tablespoons Italian seasoning 
3Tablespoons Oregano 
2Tablespoons Pasley 
2Tablespoons Black pepper
4Tablespoons Mince Garlic (fresh garlic is better)


Take chicken and cut it into small 3inch cubs place in a big size frying pan with olive oil start to cook on low heat and than add the rest of the seasoning. Cook on median heat till fully cooked. ( you may need to add more oil if it starts to stick, but most times you wont if you cook it on median heat)


Sauce Ingredients:
3 cups Half and half
3 cups Heavy whipping cream
1/2 cup sun-dried tomatoes
1/4 cup Asiago cheese
1/2 cup Ricotta cheese
1/2 cup Mozzarella cheese
1/2 cup Grated Parmesan cheese 
1/2 cup Rome Cheese 
1/2 cup Bacon bits


Add these ingredients into the frying pan that holds the chicken, Cook on LOW heat (if not on low heat it will stick to pan) cook for around 20 minutes. Add salt till it tastes good. (sorry I never measure my salt because I'm always putting more in while I cook) 
Cook some noddles, any kinda will work I like to use the bow-tie noddles best. Rise and add 3 Tablespoons of olive oil and dash of salt. Place in a large bowel and add the Chicken Alfredo sauce over top and serve. 


I like to serve it with some kinda of Italian bread and salad.
